Easter Peeps Cocktail - a Pink Mimosa

Make this delightful and cute Easter cocktail with that perennially contentious treat: Peeps. With a touch of coconut rum, some banana liqueur, and peeps simple it's a sweet one but a fun favorite for the season. Recipe makes 2!

1 oz pink Peeps simple** 1 oz banana liqueur 1 oz coconut rum 1/4 oz allspice dram (optional) 1 mini bottle champagne or bubbles Garnish: bunny Peeps
Add ingredients except for the bubbles to a mixing glass.
Fill with ice and stir for 20 seconds.
Strain into 2 chilled champagne flutes.
Top with champage or bubbles

Peeps Simple
1/2 cup water
1 cup sugar
10 pink Peeps
6 large marshmallows
2 drops pink food coloring
Add ingredients to a saucepan on low heat.
Keep on low until everything melts and turns into a simple syrup.
Strain into a clean glass jar and store in the fridge up to 2 weeks.
