Easter Peeps Cocktail - a Pink Mimosa

Make this delightful and cute Easter cocktail with that perennially contentious treat: Peeps. With a touch of coconut rum, some banana liqueur, and peeps simple it's a sweet one but a fun favorite for the season. Recipe makes 2!

Ingredients
  

  • 1 oz pink Peeps simple**
  • 1 oz banana liqueur
  • 1 oz coconut rum
  • 1/4 oz allspice dram (optional)
  • 1 mini bottle champagne or bubbles
  • Garnish: bunny Peeps

Instructions
 

  • Add ingredients except for the bubbles to a mixing glass.
  • Fill with ice and stir for 20 seconds.
  • Strain into 2 chilled champagne flutes.
  • Top with champage or bubbles
  • Garnish

Notes

Peeps Simple
  • 1/2 cup water
  • 1 cup sugar
  • 10 pink Peeps
  • 6 large marshmallows
  • 2 drops pink food coloring
  1. Add ingredients to a saucepan on low heat.
  2. Keep on low until everything melts and turns into a simple syrup.
  3. Strain into a clean glass jar and store in the fridge up to 2 weeks.
