Get your Irish on without green beer or green-colored drinks this year. Go classy with this Irish Gold Rush, subbing out Irish Whisky for bourbon, and infusing the honey syrup with lavender.
Combine Irish whisky, syrup, and lemon juice in a shaking tin and fill with ice. Shake for 10-12 seconds and strain into a chilled old fashioned glass with one large cube. Garnish with a lemon twist and candied ginger (or fresh lavender sprigs in summer).
Notes
** Honey Lavender Syrup
½ cup honey
½ cup lavender tea (1.5 cup water brewed with 2 tsp dried lavender)
Combine hot lavender tea with honey and stir until well combined. Refrigerate. Will keep 2-3 weeks in the fridge.
