Get your Irish on without green beer or green-colored drinks this year. Go classy with this Irish Gold Rush, subbing out Irish Whisky for bourbon, and infusing the honey syrup with lavender.

Ingredients
  

  • 1 oz honey lavender syrup**
  • ¾ oz lemon juice
  • 2 oz Irish whisky
  • Optional: lavender bitters
  • Garnish: lemon twist and candied ginger

Instructions
 

  • Combine Irish whisky, syrup, and lemon juice in a shaking tin and fill with ice. Shake for 10-12 seconds and strain into a chilled old fashioned glass with one large cube. Garnish with a lemon twist and candied ginger (or fresh lavender sprigs in summer).

Notes

** Honey Lavender Syrup
  • ½ cup honey 
  • ½ cup lavender tea (1.5 cup water brewed with 2 tsp dried lavender)
Combine hot lavender tea with honey and stir until well combined. Refrigerate. Will keep 2-3 weeks in the fridge.
