This barrel proof Manhattan cocktail is built with barrel proof bourbon in mind – something bold, complex, and hopefully selected by a handful of women and men whose palates you trust. Best made with a Bourbon Women barrel pick, in my case, from Four Roses in 2014.
Combine bourbon, infused vermouth, and bitters in mixing glass and fill with ice. Stir until well chilled and strain into a chilled coupe. Garnish with an orange peel.

Coffee-infused Sweet Vermouth
3 tablespoons dark roast coffee beans
4 ounces sweet vermouth
Put dark roast coffee beans in a clean glass jar with the sweet vermouth. Let steep for 4 to 8 hours – or more if you want more bitterness in the cocktail. Strain and store in the fridge in a clean jar. Use within 3 to 4 weeks.
