Watermelon Mojito

Sip on an easy mojito riff with this watermelon mojito featuring watermelon simple syrup, fresh lime and mint as well as a healthy dose of white rum. Like all mojitos we'll top with soda water to make it a refreshing rum highball drink, so choose your favorite soda to dress it up as needed.

Ingredients
  

  • 2 oz white rum
  • ¾ oz watermelon syrup*
  • ¾ oz fresh lime juice
  • Barspoon of pickled watermelon juice
  • 6 mint leaves
  • Soda water to top
  • Garnish: mint, lime wheels and pickled watermelon rind

Instructions
 

  • Combine mint leaves, simple and lime juice in the bottom of a mixing tin for a short muddle. Add rum, the pickled watermelon juice, ice and shake briefly. Strain into an ice-filled (or frozen watermelon-filled)  highball glass with a few mint leaves in it. Top with soda and garnish with lime wheel, pickled watermelon rind and fresh mint. Try to sip it slowly. Or just leave everything out to make a second one.

Notes

*Watermelon Simple: Put 1 lb of watermelon, cubed, in a ziploc bag and add 8 oz of sugar. Mix it up by massaging the bag lightly with your hands and put it in the refrigerator for 24 hours. Strain out the chunks and store in a glass jar in the fridge for 2 to 3 weeks.
