Lavender Lush – Apricot Lavender Sour

Sip on a luscious blend of apricot, lavender and citrus in this sour. You can use a base of whiskey or gin, but I think it’s best with whiskey, of course. Some lavender bitters and apricot brandy make this simple cocktail easy to make, but fancy to drink.

Ingredients
  

  • 1.5 oz rye whiskey
  • ¾ oz Apricot brandy
  • ½ oz lavender simple syrup
  • 1 oz lemon juice
  • 1 oz aquafaba or one egg white (optional)
  • 8 drops lavender bitters
  • Garnish: fresh apricot slices and/or lavender sprig

Instructions
 

  • Combine whiskey, apricot brandy, lavender simple, lemon juice, bitters and aquafaba (if using) in a cocktail shaker. Add ice and shake vigorously – at least 30 seconds, and 60 if you can stand it. Double strain the cocktail into a chilled couple glass and garnish with a sprig of lavender or a bit of apricot.

Notes

** Lavender simple: Brew 2 tablespoons of lavender with 1 cup of water. Steep and let cool. Strain, add 1 cup of sugar and stir until combined. Store in the fridge for 2-3 weeks. Great in homemade lemonade, any whiskey sour, added to a champagne cocktail/mimosa, mixed in a refreshing mule or in added to a vodka tonic.
