Pissed Leprechaun - Green Suze Cocktail

Get your bitter on with this green Suze cocktail designed for St Patrick’s day fun. Bitter, sweet, and dry, it’s a curious but compelling cocktail I keep coming back to.

Ingredients
  

  • 1 oz Suze
  • 1 oz WhiskeySmith Co Pineapple Whiskey
  • 1 oz Irish whisky (don't use the good stuff, the Suze can overpower it here)
  • 1/2 oz pineapple syrup
  • scant 1/4 oz blue curacao
  • Garnish: lemon twist or mint sprig

Instructions
 

  • Combine Suze, pineapple liqueur, Irish whisky, pineapple syrup, and blue curaçao to a mixing glass. Add ice and stir for about 30 seconds. Strain into a rocks glass with one large cube and garnish with a lemon twist or mint sprig.

Notes

Pineapple Syrup ** 
Cut up one small pineapple into small pieces and weigh. Weigh out the same amount of sugar and mix the two. Let sit out on a counter for 6-12 hours, or until the pineapple, syrup fills up the bottom of the mixing cup. Strain and store in the fridge. If you add a splash of vodka it will keep for 3-4 weeks. Save the sweetened pineapple chunks to top an ice cream sundae or pancakes.
