Summer’s in full swing, and we could all use a little easy decadence. I put together the most summer-worthy tastes all into one cocktail that’s a sweet, tart, smoky, luscious cocktail topped with a raspberry popsicle. Multiply the ingredients by 4 for a larger batch, but make sure you get a box of popsicles to go with your cocktails if you do. They’re like candy after they’re infused with the peach and smoke of the cocktail. See notes for short cuts.
¼ to ½ouncelightly smoked mezcaloptional, but highly recommended
Garnish: raspberry popsicle and mint sprig
Instructions
Combine bourbon, peach-watermelon puree, lemon juice, simple, bitters and mezcal in a shaking tin. Add ice and shake until it’s so cold it hurts. Double strain into a large rocks glass filled with ice. Top with a raspberry popsicle and a mint sprig.
Notes
You can skip infusing the bourbon with peach, it just adds more peach flavor to the cocktail. If you want to infuse, fill a quart jar with 2 cups of peeled, sliced peaches, then top it with bourbon that went ½ inch over the top of the peaches. I let it infuse for two weeks, then strained it and placed it in the fridge.** Peach-Watermelon Puree: combine 1 cup of fresh, sliced, peeled peaches with 1 cup of watermelon and blend on high. Add ½ ounce of lemon juice to it to help it keep its color. It will slowly turn brown like anything with fresh peaches, so use within a day or two.
