I'm dreaming of those juicy sweet summer peaches that are only available a few weeks a year. Freezing large quantities of them helps keep me in touch with summer all year round, and making a peach simple syrup is an easy way to turn a regular sour into something with the delicate, tart flavors of the peach.
Life's A Peach
1.5 oz Angel's Envy Bourbon
0.5 oz Giffard Abricot de Roussilon
1 oz peach simple
1 oz lemon juice
3/4 oz egg white
3 dashes ginger bitters
Garnish: leaf of mint or basil, spanked
Combine ingredients in a mixing tin and add ice. Shake vigorously until well-chilled, 30 to 60 seconds, or until is so cold it hurts your hands. Double strain into a chilled coupe glass and garnish with a leaf of mint or basil. Sip slowly and dream of summer.
